The Alchemist mixes herbs in order to generate potions with a variety of effects. A player can create healing, invisibility, elemental resistance, and mana potions; oils to coat weapons; and much more.
Alchemy is useful to all character classes. Melee fighters can use alchemy to create buff and healing potions. Spell casting classes can use alchemy to create mana potions and related buffs. Alchemy is a fun Profession where you can create potions for yourself, sell them to others, or give them to your party members and friends. Alchemists are well loved when they hand out potions.
Alchemy misses some "cool". Something fun, weird and a bit silly like most of the Engineering creations. Maybe a potion or two that transforms players into different creatures? Maybe a small small chance of things going wrong during the elixir making? I don't really know.
While this is my primary profession of choice, it is just too proper.
In my experience, alchemy is the easiest production profession to level. You can generally level by making things that are useful to you, unlike, say, re-enchanting the same bracer for skill-ups. At higher levels, transmutes are also very handy: creating titanium, epic gems, and converting eternals into more useful eternals.
With the professions balanced to provide roughly equal benefits, I think most of my future alts will be choosing alchemy.
If you have a toon with Jewelcrafting, better yet: do Icy Prism then Transmute.
